Black summer truffle, tuber aestivum vitt, has a much milder truffle flavour than its winter counterpart. The truffle has a textured black skin and is beige in colour on the inside. Summer truffle works particularly well grated over roasted vegetables or stirred through scrambled eggs.

Black summer truffles are ideal for introducing people to the complex flavours of truffle for the first time - with a little of the preserving juice. Alternatively use this truffle to add truffley asthetics to a dish - but then add a boost of black truffle oil for a more intense flavour.
